Last year, business degree holder Claire Au, 26, hung up her power suits and opted for a sweaty job with long hours selling fish soup.

She opened her first stall in June last year. Now, she has two stalls- both called King’s Fish Soup- located at Jalan Bukit Merah ABC Brickworks Market and Maxwell Food Centre.

To stand out from the competition, Ms Au’s stalls offer fish that is air-flown from Indonesia and a Cantonese-style fish soup that is derived from a secret family recipe.

“Our differentiation is in the soup, which has 12 ingredients and which we brew for a few hours at the same time while painstakingly monitoring the strength of the fire. This is to ensure that the essence of the ingredients is fully drawn out,” she said.

Four workers man her stalls and she divides her time between the two locations. But Ms Au, who has a Bachelor of Business Management in Marketing, is not content to stop at two. She aims to have 15 King’s Fish Soup stalls around Singapore by opening two new ones every year, is she can find the right locations.

And she harbours a dream of venturing into franchising and opening other food outlets like cafes.

The daddy-daughter duo behind KING’S FISH SOUP feeds both stomach and spirit.

They may sell humble fish soup, but the Au team driving King’s Fish Soup boasts a pedigree background. Boyd Au, 56, is a successful businessman who co-founded local electronics brand Enzer in 1984 (he sold the business last year), while daughter Claire, 26, an SMU marketing graduate, once worked with Louis Vuitton. The regal name of their year-old hawker business which currently has two outlets, however, isn’t about ego. “We want to serve God in the marketplace. And we also want to offer one of the best fish soups in Singapore,” explains Boyd, a devout Christian. They distribute complimentary meal coupons to the needy through various grassroots organisations. For those more concerned with food than faith- the two spent six months perfecting the soup. “We’re Cantonese, so the soup is key. We used my nanny’s recipe,” reveals Claire.
